<li>Cabbage (Shredded / chopped finely) - 4 cups</li>
<li>Besan -3/4 to 1 cup</li>
<li>Ginger Garlic paste - 1 tsp</li>
<li>Cumin powder - 1 tsp</li>
<li>Green chilli - 1 ( finely chopped)</li>
<li>Chilli powder- 1/4 tsp (optional)</li>
<li>Coriander leaves - few tbsp ( finely chopped)</li>
<li>Salt</li>
</ul>

<b><u>For the Gravy:-</u></b></div>

<li>Tomatoes -3</li>
<li>Green chilli - 1</li>
<li>Besan -1 tbsp</li>
<li>Hing - a big pinch</li>
<li>Cumin Seeds - 1tsp</li>
<li>Ginger Garlic paste - 1 tsp</li>
<li>Chilli powder - 3/4 tsp</li>
<li>Paprika - 1/4 tsp</li>
<li>Coriander powder - 1 and 1/2 tbsp</li>
<li>Turmeric powder -1/2 tsp</li>
<li>Curd - 3 tbsp</li>
<li>Coriander leaves / Cilantro - a few tbsp</li>
<li>Salt</li>
<li>oil</li>
</ul>

<b><u>Method:-</u></b></div>

<u><b>To make Koftas:-</b></u></div>
<div>
<ol style="text-align: left;">
<li>In a bowl add Cabbage, Ginger Garlic paste,green chilli, chilli powder, cumin powder, coriander leaves,salt and besan. Mix this <b style="font-style: italic;">without adding any water ( </b>the cabbage will let out it's own water when mixed).</li>
<li>Now make small lime sized balls of cabbage koftas .and bake it @ 350 deg for 15 to 20 mins or until slightly brown. ( u can also deep fry this koftas)</li>
</ol>
<div>
<b><u>To make the Gravy:-</u></b></div>
</div>
<div>
<ol style="text-align: left;">
<li> Grind the tomatoes and green chilli to a smooth paste.</li>
<li>In a pan heat oil and season with hing, cumin seeds ..</li>
<li>Add the ginger garlic paste and saute for few secs..</li>
<li>Now add the besan and fry for few more mins.</li>
<li>Add in the tomato-chilli paste and let it simmer till oil ouches out on top and it's reduced to almost half..</li>
<li>now add in chilli powder ,coriander powder ,turmeric powder ,salt and saute again few mins..</li>
<li>Add 2 cups of water and cook covered till it comes to a boil..</li>
<li>Add in the baked Koftas to this gravy and let it come to a boil again..</li>
<li>Cook covered in low flame for 10 mins or until gravy reaches desired consistency..</li>
<li>Add in lots of chopped Coriander/ Cilantro leaves and switch off the flame..</li>

<li>Clean and cut chicken into pieces.</li>
<li>Grind the ginger,garlic,green chilli and coriander leaves to a smooth paste with out adding water.</li>
<li>In a bowl add chicken and ginger-garlic-coriander paste , all the spices and salt and mix well to coat the chicken evenly.e</li>
<li>Marinate for atleast 30 mins to 1 hr..if marinating for more time keep it in the refrigerator..</li>
<li>In a pan heat enough oil to deep fry. Once oil is hot deep fry the chicken pieces for 3 mins per side or till the chicken is cooked fully ..</li>
<li>Once cooked drain the chicken and place it in a paper towel to absorb excess oil..</li>

<li>Heat a pan with little oil, add the urad dal and fry till it turns golden brown color.</li>
<li>Add the green chillies and red chillies and saute for few seconds.</li>
<li>Now add the coriander leaves,tamarind ( make sure there in no seeds in it) and saute for few more mins..</li>
<li>Add the grated coconut , Hing ,salt and switch off the stove..</li>
<li>Let it cool down and grind it to a smooth paste with very little water..</li>
<li>For the seasoning ,heat oil in a pan and once oil is hot add mustard seed and allow it to splutter then add the dried red chilli and curry leaves..pour this over the ground paste and mix well.and serve</li>

<li>Peppercorns -1/2 tsp</li>
<li>Turmeric Powder -1/2 tsp</li>
<li>Salt</li>

<li>Clean the Fish ,make slits on either side of the fish and Pat it dry with paper towel /clean kitchen towel.</li>
<li>Now Grind all the Masalas Given for Grinding into a semi coarse paste.</li>
<li>Now apply this paste in between the slits and all over the fish..and let it marinate for atleast 30 mins in the fridge.</li>
<li>Now heat a wide bottom pan and add little oil ,once the oil is hot shallow fry the fish...</li>
<li>Fry for approx 5 to 8 mins on each side on a medium flame or until the fish is completely cooked and browned on both sides...</li>
<li>Spicy and Flavorful Fish fry is ready to enjoy :)</li>

<li>In a pan heat oil and fry the garlic pods and dry red chillies till garlic gets slightly browned.</li>
<li>Now add tomato chunks , hing ,salt and saute for few mins.</li>
<li>Cook covered till tomatoes become mushy.</li>
<li>Add the coriander and mint leaves and saute for a min.</li>

Getting a perfect hard boiled egg everytime ..is not easy...sometimes the eggs will be under cooked or eggs will crack while cooking it ...sometimes i peel the egg white along with the shell...But one day, as usual i was watching Rachel Ray's Show..where she gave this tip to get a perfect hard boiled egg...this is a fool proof tip...so try it next time....<br />
<br />
<ol style="text-align: left;">
<li>The eggs should be in room temperature..</li>
<li>In a pan take water and add salt to it and drop the eggs one by one gently.</li>
<li>Wait till the water boils vigorously..</li>
<li>Once the water started boiling ,cook covered for 8 mins.</li>
<li>After 8 mins switch off the stove let it rest for another 8 mins..</li>
<li>Now Drain the hot water from the pan..and fill it with cold water ..let the egg sit it in for a while say another 10 mins...by this time eggs should have cool down, if not change water once more..</li>
<li>Now to remove the shell just tap the bottom of the egg so that it cracks a little and gently peel of the shell from there.</li>

Preheat the oven @ 350 deg and bake for 40 mins or untill toothpick inserted in the middle comes out clean.. the cupcakes were ready in 10 mins...</div>

<li><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Now add the powdered sugar 1/2 a cup at a time and mix again till well incorporated ..do this till all the sugar is mixed..</span></li>
<li><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Add the vanilla extract and mix well..</span></li>
<li><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Now the Icing will be in a spreadable consistency..which will be perfect to frost the cake..</span></li>

Before going to today's recipe, I would like to dedicate this post to my hubby, M. who is so supportive and encouraging and he gives me so many wonderfull ideas regarding this new found passion of mine. He is a kind of man who can never say no to anything / anyone and he is a great cook ,who occasionally enters the kitchen. When I say "<i><b>Simple is the best</b> </i>" it's not just a saying...to realise the true meaning of it .You don't have to do any soul searching , just try to make this kulfi at home ...it is just not fair for this to turn out so yummy and creamy and absoultely delicious with almost little or no work...all u have to do it <i>pour , mix , pour , freeze </i>no cooking what so ever and u get a piece of heaven in ur hand which melts away in ur mouth...can u think of a better desert than this?....it tastes so rich and can be made ahead which makes it prefect for parties....<br />

<li>14 Ounce can of Sweetened Condensed Milk -1 </li>
<li>12 Ounce can of Evaporeated Milk -1</li>
<li>Pistachios - 15 to 20</li>
<li>Green Cardamom -5 (just the seeds)</li>
<li>Safforn / Kesar - few strands</li>
<li>Whole Milk - 1.5 cup</li>
</ul>

<li>Remove the seeds from the Green Cardamom and pulse these seeds and the pistachios in the mixie,just once or twice..</li>
<li>Now take a bowl and pour all the ingrediants along with the pulsed cardamom and pista ..and mix.</li>
<li>Now take your kulfi mold and pour this mixture into it till it's 3/4 full..Close the lid and freeze it overnight or atleast for 6 hrs untill it sets completely...</li>
<li>Now what....? do i have to say ....enjoy ur kulfi..... cheers !!! </li>
