Ingrediants:-
Potato -2 big
R.chilli Powder - 1.5 tsp
Cumin powder -1 tsp
Coriander powder-1/4 tsp
Pepper powder- a big pinch
Turmeric powder - 1/4 tsp
Curry leaves -a spring
Salt
Oil-3tbsp
Method:-
Wash,peel and cut the potatoes into even shaped cubes,make the cubes small even cubes so it will cook fast and evenly.
Now add all the Spices and Curry leaves to the potato and marinate it for atleast 10 mins.(i didn't have curry leaves but adding curry leaves will give a lot of flavor)
Now heat a flat skillet,I used a cast iron skillet which helps to sear the potato which gives a nice crispy brown color and fry them evenly,but even the non stick skillet works fine too.Add oil to the pan just about 3 tbsp if u need more we can add later (ie if the potato sticks to the pan).once the skillet is hot add the potato.and make sure it is evenly spread in the pan .and close the lid and cook for 5 mins .then open the lid and give the potato a toss .then cook covered until potato is cook and tender inside and crisp and brown outside.Make sure to stir it gently every 5 mins so that all sides are cooked evenly.atlast we can cook uncovered for few more mins before switching off the stove.
I got this recipe from my hubby.this was his way of doing potato fry...and we all like it ...hope u all too...
Note:-There is no need to add water ,to cook the potatoes.
I do this sometimes(when short of veggies) as a side for rice...Its very tasty...yours look delicious...
