Cabbage Kofta Curry ( Baked Version)



Recipe Adapted from :- manjula's kitchen

Ingredients:-
For Koftas:-


  • Cabbage (Shredded / chopped finely) - 4 cups
  • Besan -3/4 to 1 cup
  • Ginger Garlic paste - 1 tsp
  • Cumin powder - 1 tsp
  • Green chilli - 1 ( finely chopped)
  • Chilli powder- 1/4 tsp (optional)
  • Coriander leaves - few tbsp ( finely chopped)
  • Salt
For the Gravy:-
  • Tomatoes -3
  • Green chilli - 1
  • Besan -1 tbsp
  • Hing - a big pinch
  • Cumin Seeds - 1tsp
  • Ginger Garlic paste - 1 tsp
  • Chilli powder - 3/4 tsp
  • Paprika - 1/4 tsp
  • Coriander powder - 1 and 1/2 tbsp
  • Turmeric powder -1/2 tsp
  • Curd - 3 tbsp
  • Coriander leaves / Cilantro - a few tbsp
  • Salt
  • oil
Method:-
To make Koftas:-
  1. In a bowl add Cabbage, Ginger Garlic paste,green chilli, chilli powder, cumin powder, coriander leaves,salt and besan. Mix this without adding any water ( the cabbage will let out it's own water when mixed).
  2. Now make small lime sized balls of  cabbage koftas .and bake it @ 350 deg for 15 to 20 mins or until slightly brown. ( u can also deep fry this koftas)
To make the Gravy:-
  1.  Grind the tomatoes and green chilli to a smooth paste.
  2. In a pan heat oil and season with hing, cumin seeds ..
  3. Add the ginger garlic paste and saute for few secs..
  4. Now add the besan and fry for few more mins.
  5. Add in the tomato-chilli paste and let it simmer till oil ouches out on top and it's reduced to almost  half..
  6. now add  in chilli powder ,coriander powder ,turmeric powder ,salt and saute again few mins..
  7. Add 2 cups of water and cook covered till it comes to a boil..
  8. Add in the baked Koftas to this gravy and let it come to a boil again..
  9. Cook covered in low flame for 10 mins or until gravy reaches desired consistency..
  10. Add in lots of chopped Coriander/ Cilantro leaves and switch off the flame..

this goes well with rotis, parathas,pulav etc..

Strawberry Yogurt Smoothie



Ingredients:-
  • Strawberry - 6 to 8 hulled
  • Vanilla / Strawberry Yogurt - 1/2 cup
  • Milk -1/2 cup
  • Sugar - 3tbsp
  • Ice cubes -5
Method:-
  1. In a blender add strawberry, yogurt,milk,sugar and blend them all well. 
  2. Add in the ice cubes and whiz it up till smooth and creamy..
  3. Pour in a glass and enjoy...

Note:- 
       If u don't have the vanilla/ strawberry yogurt..you can substitute it with Plain Yogurt and little vanilla extract..

Onion Tomato Raita ( Without Curd )



Ingredients:-

  • Onion -1 small 
  • Tomato -1 small 
  • Coriander leaves / Cilantro - a handfull
  • Lemon juice - of 1/2 a lemon
  • Green chilli - 1 
  • Salt
Method:-
  1.  Slice the onion and tomato in thin juliens..and chop green chilli 
  2. In a bowl mix all the ingredients and let it stand for 15 to 30 mins..
  3. The onion will turns pinkish ...check for seasoning and serve...

This goes well with Biriyani , Pulav ,cutlets 

Special Chicken Fry



Ingredients:-

  • Boneless Chicken Thighs - 4
  • Chilli powder -1 tsp
  • Corinader powder - 1.5 tsp
  • Turmeric Powder -1/2 tsp
  • Fennel seed powder -1/2 tsp
  • Garam masala -1/4 tsp
  • Salt -as per taste
  • Oil - for deep frying
To grind :-
  • Ginger - 1 inch piece
  • Garlic - 4 big pods
  • G.chilli - 1
  • Coriander leaves/stem - 2 or 3 springs
Method:-
  1. Clean and cut chicken into pieces.
  2. Grind the ginger,garlic,green chilli and coriander leaves to a smooth paste with out adding water.
  3. In a bowl add chicken and ginger-garlic-coriander paste , all the spices and salt and mix well to coat the chicken evenly.e
  4. Marinate for atleast 30 mins to 1 hr..if marinating for more time keep it in the refrigerator..
  5. In a pan heat enough oil to deep fry. Once oil is hot deep fry the chicken pieces for 3 mins per side or till the chicken is cooked fully ..
  6. Once cooked drain the chicken and place it in a paper towel to absorb excess oil..

This chicken  fry goes well with rice and chicken curry or with any biriyani or pulav....
