Avial ( Mixed Veggie Stir Fry)

 The speciality of this dish is that we get to add a lots of veggies in it. it taste really different from all the regular stir fries we make daily.


Ingrediants:-

(We may need 2 or 3 cups of all the veggies mixed)
    Carrot
    Beans
    Brinjal
    Raw mango
    Drumstick
    Suran / chaanai 
    Cucumber
    SnakeGourd
For the Masala:-
    Coconut - 3tbsp
    G.chillies - 3
    Cumin seeds-1 tsp
    Turmeric Powder - 1/4 tsp
For Tempering:-
     Coconut oil - 1tbsp
     Mustard Seed - 1tsp
     Red Chillies -3
     Curry Leaves - 1 spring


  First cut all the veggies in juliens .u can cook all the veggies in a pan or u can use a pressure cooker.if ur using a pressure cooker make the juliens a little more thicker or else veggies will be over cooked .place all veggies in the cooker add salt and little water .cook till 1 whistle on high flame.







Grind the coconut,turmeric,cumin,g.chillies into a coarse paste as shown in picture.In a pan add coconut oil and add mustard seed ,let it splutter then add red chillies and curry leaves.now add the cooked veggies and coconut masala and saute till raw smell goes.we can add little more coconut oil if needed at this stage ..our avial is ready ......yum

Note :- it's important to take care to cut all veggies in same size as possible ,so that they cook evenly .if cooking in a pan instead of a pressure cooker.first add the veggies like carrot,beans,raw mango,drum stick (veggies which take more time to cook) and 1/2 cook it before adding the other veggies like cucumber ,brinjal etc...
      You  can adjust the amount of mango / curd according to the soarness u like.
