Kovakai Thoran (Tindora Stir Fry)

  • Dondakaya /Kovakai - 2 cups (cut lengthwise)
  • Chilli powder -1/2 tsp
  • Cumin powder-1/4 tsp
  • Turmeric Powder-a pinch
  • Coconut -2 tbsp (Grated)
  • Salt
  • Mustard seed-1/4 tsp
  • Dry red chillies-2
  • Curry leaves- a spring
  • Oil

    1. In a pan add oil and let the oil heat up once the oil heats add mustard seeds allow it to splutter,then add red chillies and curry leaves.
    2. Add the kovakai  and salt to this and saute for 5 mins and cook covered for another 5 mins in sim without adding water.stir in between..At this stage the kovakai will become slightly brown 
    3. Now sprinkle some water (just enough to cook the veggie)cook covered till kovakai is done.
    4. Cook uncovered till the excess water evaporates.
    5. Now add the chilli powder,cumin powder,turmeric and saute for few mins...
    6. Add coconut and saute for few more mins.....
    7. Serve with rice as a side dish...
