Egg Curry in Coconut Milk ( Kerala Style )




Ingredients :-
  • Hard Boiled Eggs - 4 nos/..
  • Ginger - 1 inch piece
  • Onion - 1 
  • Green Chilles -1
  • Tomato -1 
  • Chilli Powder -1 tsp
  • Turmeric Powder -1/2 tsp
  • Coriander Powder - 1 tsp
  • Garam Masala Powder -1/2 tsp
  • Coconut milk - from 1 big coconut or 3/4 th of the canned coconut milk.
  • Oil
  • Salt
  • Curry Leaves
Method:-
In a pan heat oil and saute the chopped ginger

 Now add the green chillies saute for few mins..

 Now add the thinly sliced onions,saute till transparent..

Add in Quartered Tomatoes..

 And the spices (ie) Chilli powder,coriander powder,turmeric powder,salt

 Add little water and bring it to a boil.
 

 Now add in the coconut milk..

 Now add garam masala.

 And curry leaves..Let the gravy come to a slight boil..

Add in Hard Boiled Eggs to this curry and let it cook for 2 mins..

This curry is best served with idyappam and appam...

I served it with some soft Idyappam ...

How to make perfect Hard Boiled Eggs ???

     
    Getting a perfect hard boiled egg everytime ..is not easy...sometimes the eggs will be under cooked or eggs will crack while cooking it ...sometimes i peel the egg white along with the shell...But one day, as usual i was watching Rachel Ray's Show..where she gave this tip to get a perfect hard boiled egg...this is a fool proof tip...so try it next time....

  1. The eggs should be in room temperature..
  2. In a pan take water and add salt to it and drop the eggs one by one  gently.
  3. Wait till the water boils vigorously..
  4. Once the water started boiling ,cook covered for 8 mins.
  5. After 8 mins switch off the stove let it rest for another 8 mins..
  6. Now Drain the hot water from the pan..and fill it with cold water ..let the egg sit it in for a while say another 10 mins...by this time eggs should have cool down, if not change water once more..
  7. Now to remove the shell just tap the bottom of the egg so that it cracks a little and gently peel of the shell from there.

This way you'll get a perfect hard boiled egg everytime...

Spicy Egg Roast







Ingredients:-
  • Hard boiled Egg -4
  • Mustard seeds - 1 tsp
  • Curry leaves - A spring
  • Onion - 1 big 
  • Tomato - 1 big
  • Green chillies - 2 ( according to ur spice preference)
  • Ginger Garlic Paste - 1 tsp
  • Chilli powder - 1 tsp ( according to ur spice preference)
  • Pepper powder - 1tsp ( according to ur spice preference)
  • Coriander powder - 1tsp
  • Turmeric powder- 1/4 tsp
  • Garam masala powder - 1/2 tsp
  • Salt
  • Oil
Method:-

In a pan heat oil and season it with mustard seed and curry leaves..


Now add the thinly juliened onions and saute till transparent.

Add in the ginger garlic paste till the raw smell goes..

 Add in the Green Chillies

 Now add all the spices..

 Now add the chopped tomatoes..and saute for few mins and cook covered in low flame..

Cook till the tomatoes are all mashed up..

Now add in the boiled eggs and mix well

Add in chopped Coriander/ Cliantro

This Egg Roast goes well with idli ,dosa ,appam , rice.....

Spicy Omelette Curry

Ingrediants:-
For Omelette :-

  • Eggs -4
  • Onion -1/4 cup
  • G.Chillies -1
  • Pepper powder -1/4 tsp
  • Turmeric Powder -1/4 tsp
  • Salt
For the Curry:-
  • Shallots - 1 cup chopped
  • Garlic - 4 big pods chopped
  • Tomato -2 
  • Sambar powder - 2 tsp
  • Coriander powder - 2 tsp
  • Turmeric powder -1 tsp
  • Mustard seed -1/4 tsp
  • Fenugreek seed- 1/4 tsp
  • Fennel seeds-1/4 tsp
  • Tamarind - half a lime size
  • Curry leaves -  a stem
  • Gingerlly oil
Method:-
  1. In a bowl mix the ingrediants given to make omelettes and beat well with a fork..
  2. Now make omelettes ...make sure that the omelettes are thick..
  3. Cut the omelettes into bite size pieces.and keep aside
  4. In a pan heat oil...add mustard seed,fenugreek seed, fennel seed ,curry leaves and season it.
  5. Add chopped shallots ,garlic and saute till transparent.
  6. Add the sambar powder ,coriander powder, turmeric powder and fry till raw smell goes..
  7. Add the tomatoes...and cook it its all mashed up..
  8. Now add the tamarind water,salt..and water to adjust the consistency of the gravy...
  9. Let the gravy come to a boil or come to the desired consistency...
  10. Add the omelette pieces and cook covered for few mins..

Serve with rice...
