Egg Curry in Coconut Milk ( Kerala Style )




Ingredients :-
  • Hard Boiled Eggs - 4 nos/..
  • Ginger - 1 inch piece
  • Onion - 1 
  • Green Chilles -1
  • Tomato -1 
  • Chilli Powder -1 tsp
  • Turmeric Powder -1/2 tsp
  • Coriander Powder - 1 tsp
  • Garam Masala Powder -1/2 tsp
  • Coconut milk - from 1 big coconut or 3/4 th of the canned coconut milk.
  • Oil
  • Salt
  • Curry Leaves
Method:-
In a pan heat oil and saute the chopped ginger

 Now add the green chillies saute for few mins..

 Now add the thinly sliced onions,saute till transparent..

Add in Quartered Tomatoes..

 And the spices (ie) Chilli powder,coriander powder,turmeric powder,salt

 Add little water and bring it to a boil.
 

 Now add in the coconut milk..

 Now add garam masala.

 And curry leaves..Let the gravy come to a slight boil..

Add in Hard Boiled Eggs to this curry and let it cook for 2 mins..

This curry is best served with idyappam and appam...

I served it with some soft Idyappam ...

Spicy Fish Curry With Kudampuli



Ingrediants:-
  • Fish - 1/2 kg ( King fish, Pomfert ,Pompano )
  • Shallots - 1 cup chopped
  • Kudampuli -4
  • Garlic -4  big pods
  • Ginger - 1 inch piece
  • G.chillies-2
  • Fenugreek powderr -1/4 tsp
  • Chilli powder - 2 tbsp
  • Coriander Powder - 1 tbsp
  • Turmeric Powder - 1/2 tsp
  • Mustard seeds -1/4 tsp
  • Curry leaves - 2 stems
  • Salt
  • Oil
Method:-

  1. In a pan heat oil and season with musard seeds and curry leaves.
  2. Add chopped shallots and saute till transparent..
  3. Add in garlic ,Ginger, G.chilliessaute for few mins.
  4. Now simmer the flame and add chilli powder,coriander powder,turmeric powder,fenugreek powder..and saute till raw smell goes..
  5. Add Kudampuli 
  6. Add  little salt ,water according to the consistency of the gravy and let it come to a boil...
  7. Once the gravy stars boiling add the fish pieces and cook covered for 10 mins in medium flame..
  8. Cook uncovered for 5 mins....and the gravy is ready to be served...

Enjoy this with some white rice and with some fish fry...

Mutton Pepper Masala





Ingrediants:-

  • Mutton / Baby Goat -1/2 kg
  • Onion -1 medium
  • Tomato - 1
  • Ginger Garlic Paste - 2 tsp
  • R.Chilli powder - 1/2 tsp
  • Black pepper powder -2 tsp ( adjust according to ur spice level)
  • Turmeric powder - 1/2 tsp
To Dry Roast and Grind:-
  • Poppy seeds -1 tsp
  • Fennel Seeds - 1 tsp
  • Black peppercorns -5
  • Coriander Seeds - 1 tsp
  • Cumin Seeds - 1tsp
  • Cinnamon - 1 inch stick
  • Cloves - 2 
  • Green Cardamons - 2
Method:-


  1. Pressure cook mutton with little salt,turmeric powder and ginger garlic paste..for 3 whistles or untill the mutton is fully cooked
  2. Once cooked ..Drain the water from the mutton and keep aside...
  3. Dry roast the ingrediants given ' to dry roast and grind' and make a fine powder ..
  4. In a pan heat oil add oinion saute till transparent..
  5. Add in Ginger Garlic paste and saute till raw smell goes ..
  6. Add in Tomatoes add cook till it becomes soft.
  7. Add Chilli powder ,Pepper powder ,Turmeric powder cook till oil ouches out...
  8. Now add the ground masala powder. and saute again for few mins..
  9. Add the mutton stock / water and bring it to a boil or till the gravy thickens..
  10. Add the Mutton pieces and cook till the gravy reaches desired consistency...
  11. Garnish with coriander leaves..

Serve it with rice or rotis...


Spicy Omelette Curry

Ingrediants:-
For Omelette :-

  • Eggs -4
  • Onion -1/4 cup
  • G.Chillies -1
  • Pepper powder -1/4 tsp
  • Turmeric Powder -1/4 tsp
  • Salt
For the Curry:-
  • Shallots - 1 cup chopped
  • Garlic - 4 big pods chopped
  • Tomato -2 
  • Sambar powder - 2 tsp
  • Coriander powder - 2 tsp
  • Turmeric powder -1 tsp
  • Mustard seed -1/4 tsp
  • Fenugreek seed- 1/4 tsp
  • Fennel seeds-1/4 tsp
  • Tamarind - half a lime size
  • Curry leaves -  a stem
  • Gingerlly oil
Method:-
  1. In a bowl mix the ingrediants given to make omelettes and beat well with a fork..
  2. Now make omelettes ...make sure that the omelettes are thick..
  3. Cut the omelettes into bite size pieces.and keep aside
  4. In a pan heat oil...add mustard seed,fenugreek seed, fennel seed ,curry leaves and season it.
  5. Add chopped shallots ,garlic and saute till transparent.
  6. Add the sambar powder ,coriander powder, turmeric powder and fry till raw smell goes..
  7. Add the tomatoes...and cook it its all mashed up..
  8. Now add the tamarind water,salt..and water to adjust the consistency of the gravy...
  9. Let the gravy come to a boil or come to the desired consistency...
  10. Add the omelette pieces and cook covered for few mins..

Serve with rice...

Dried Anchovies Curry



Ingrediants:-

  • Dried Anchovies - 2 cups
  • Brinjal / Raw Plantain - 1 cup
  • Red Chillies - 5
  • Green chillies -2
  • Peppercorns - 1/2 tsp
  • Cumin Seeds - 1 tsp
  • Coriander Seeds - 1tsp
  • Shallots - 1 (big)
  • Coconut -1 cup
  • Tamarind -Small lemon size
Method:-
  • Soak the dry fish in water for 15 mins...remove head tail and the small bone inside..
  • For the masala :- Grind the coconut ,red chillies ,turmeric, cumin seeds,coriander seeds,pepper ,shallots to a very fine paste

  1. In a pan add brinjal ,g.chillies,curryleaves,water and cook cover till brinjal is cooked.
  2. Add the dry fish and coconut paste,salt  and let it come to a boil...
  3. Once it comes to a boil add in the tamarind water...and cook covered till the fish is all cooked ..
  4. Cook uncovered till the gravy reaches the required consistency...


Serve with hot white rice...

Egg Drumstick Gravy (Muttai Murunkai Kuzhambhu)





Ingrediants:-

  • Egg -4 ( Hard Boiled )
  • Onion - 1/2 medium size
  • Tomato -1 small
  • Drumstick - 1 
  • Coconut -1/2cup
  • Dry RedChillies - 3
  • Cumin seeds-1/2 tsp
  • Peppercorns -5 
  • Curry leaves



Method:-
  1. Grind Coconut ,dry redchillies,cumin seeds,peppercorns to a nice fine paste. keep it aside..
  2. In a pan heat oil and saute onion till it become transparent add curry leaves.
  3. Now add the tomato and saute till the tomatoes becomes soft now add drumstick  and little water and cook covered till drumstick is all done.
  4. Now add boiled eggs and the ground coconut masala,salt...and water if needed ...and let it boil till the raw smell of the masala evaporates..
  5. Serve as a curry for hot white rice...

Chettinad Chicken Curry


Ingrediants:-
  • Chicken - 1kg
  • Shallots - 1 cup or more
  • Tomato -1
  • Turmeric powder -1/2 tsp
  • Curry leaves - a spring
  • Coriander Leaves 
  • Oil
To Dry Roast and Grind:-
  • Cinnamon - 1inch stick
  • Cardamom -2
  • Dry redchillies -8
  • Coriander Seeds - 1.5  tsp
  • Fennel seeds - 3/4 tsp
  • Cumin Seeds - 1/2 tsp
  • Peppercorns - 1/2 tsp
Make a Paste with:-
  • Green chillies -2
  • Garlic pods- 8
  • Ginger -1 inch
  • Poppy seeds - 1tsp (pre soak for 10 mins)

Method:-
  1. Cut and clen chicken
  2. Dry roast the ingrediants given till the spices give out a nice aroma and grind it to a fine powder..keep it aside
  3. Make a paste with g.chillies ,gin garlic ,poppy seeds .make a fine paste of it too and keep aside
  4. In a pan add oil and let it become hot .now add the shallots and curry leaves and saute till transparant.
  5. Add the paste made in step 3 and saute till u get a nice aroma. 
  6. Add chicken and saute for atleast few mins uncovered.the chicken will turn white
  7. Add salt ,turmeric powder,ground masala powder ,tomatoes and saute again uncovered for few mins.
  8. Pressure cook it till the chicken is done .which will be one or two whistles.
  9. Garnish with coriander leaves...
      This gravy will have a very nice aroma from the roasted spices and have a very distinct taste from the regular chicken gravies.but it's important to use shallots to enhance flavor ,but if don't have it u can always substitute with onions..

Chicken Masala


Ingrediants:-
  • Chicken - 1 kg
  • Onion -1 big
  • Tomato -1 
  • Cloves-2
  • Cinnamon stick-1 inch
  • Cardamom -2
  • Star Anise -1 
  • Fennel seeds - 1/2tsp
  • Ginger garlic paste -  2 tsp
  • Green chilli -1 
  • Chillli powder -1 tsp
  • Coriander Powder - 1 tsp
  • Turmeric powder -1/4 tsp
  • Cumin powder -1/4 tsp
  • Black pepper - 1/4 tsp (fresh coarsely ground)
  • Mint - 1 tsp (chopped)
  • Corianders leaves - 4tbsp.
  • Salt
  • Oil



Method:-
  1. In a pan add oil and add fenugreek seeds and all the whole garam masalas,fry well.
  2. Add onion, g.chilli and fry till translucent..Add gingergarlic paste and saute till raw smell goes.
  3. Add Tomatoes and saute few mins and cook covered till tomato is cooked well,and mashed up .
  4. Add mint leaves,chilli powder, coriander powder, turmeric powder ,pepper powder,cumin powder ,saltand saute for few more mins .
  5. Add chicken and saute for few mins . 
  6. cook covered in medium flame till chicken is fully cooked .no need to add water.it will take atleast 30 mins..or u can use pressure cooker and cook for 2 or 3 whistles in high flame...
  7. Once chicken is cooked ,cook uncovered till all the water evaporates..or untill the gravy reaches the desired consistency...
  8. Serve with pulav, biriyani , chappathi, roti , dosa ,idli and the list goes on....enjoy :)

Chicken Curry




Ingrediants:-
Chicken - 5 drumsticks (cut each into 2 pieces)
Bayleaf,cloves,cardamom - 2 0r 3
Cinnamon-1 inch stick
Onion -1 chopped
Tomato -1 chopped
GingerGarlic paste - 2 0r 3 tsp
G.chillies - 1 0r 2
Chillipowder-3/4 tsp
Coriander powder-1tsp
Cumin powder - 1tsp
Turmeric -1/4 tsp
Freshly grounded pepper - 1/2 tsp
Coconut-1/2 cup
Poppy seeds-3tsp
Coriander leaves-3 springs
Oil
Salt

Method:-

 * Clean and cut chicken pieces.
 * In a pan dry roast poppy seeds for a min or two.then add coconut and fry for another 2 mins. At this stage add chilli,cumin,coriander and turmeric powder and fry for one more min. grind this mixture to a fine paste.



 *In a pressure cooker add oil and fry bayleaf,cloves,cardamom,cinnamon,then add onion and fry till translucent and gingergarlic paste and fry till raw smell goes.Add the tomato and pressure cook it in medium flame till 1 whistle(don't hav to add water).Add the chicken pieces and salt to this onion tomato gravy and pressure cook again for 2 whistles or untill the chicken is fully cooked.





*Once the chicken is cooked add the coconut paste and little water and let it boil and simmer till gravy reaches the desired consistency,add coriander leaves and fresly ground pepper powder before switching of the stove.




*Serve with any type of rice or rotis,naan etc...

Spicy fish curry with a twist(maruinthu curry)




Ingrediants( to be roasted):-
Coconut - 1/2 grated coconut
Red chillies -10
Shallots -2
dry ginger -1 inch piece or dry ginger powder-2tsp
mustard seed -1 tsp
ajwain (omam) -1tsp
Cumin Seeds - 1tsp
Coriander Seeds - 3 tsp
Turmeric powder- 1/4tsp
peppercorns -5 Curry leaves
Ingrediants(for the curry):-
Shallots -1 cup
Green Chillies -1
tamarind -lemon size
Curry leaves
Oil
Method
Add the above ingrediants mentioned to be roasted except coriander seeds in a pan add a little oil to it and fry them all till the coconut is fried well or till the coconut turns dark brown.You will get a nice aroma at this stage.once this is done add the coriander seeds and fry them for fews sec and switch off and allow the mixture to cool and grind it to a smooth paste. In a pan add oil fry the shallots,curryleaves,u can add drumstick and mangoes also.fry well.add some water and cook covered for few mins till shallots becomes tender.add the coconut paste and let it boil well .add the fish pieces and cook covered till the fish is cooked well and becomes soft.the curry is ready to serve.. Enjoy ur spicy fish curry with rice,will go well with idlis and dosa also..
this preparation is the same as the other spicy fish recipe i've posted but this recipe has few more ingrediants to be added for roasting . this curry is given daily for mom who is breast feeding....it is good to take it atleast once a month for others...
