Pista Kesar Kulfi ( Indian Icecream )

   
      When I say "Simple is the best " it's not just a saying...to realise the true meaning of it .You don't have to do any soul searching , just try to make this kulfi at home ...it is just not fair for this to turn out so yummy and creamy and absoultely delicious with almost  little or no work...all u have to do it pour , mix , pour , freeze  no cooking what so ever and  u get a piece of heaven in ur hand which melts away in ur mouth...can u think of a better desert than this?....it tastes so rich and can be made ahead which makes it prefect for parties....



Ingredients:-

  • 14 Ounce can of Sweetened Condensed Milk -1 
  • 12 Ounce can of Evaporeated Milk  -1
  • Pistachios - 15 to 20
  • Green Cardamom -5 (just the seeds)
  • Safforn / Kesar - few strands
  • Whole Milk - 1.5 cup
Method:-
  1. Remove the seeds from the Green Cardamom and pulse these seeds and the pistachios in the mixie,just once or twice..
  2. Now take a bowl and pour all the ingrediants along with the pulsed cardamom and pista ..and mix.
  3. Now take your kulfi mold and pour this mixture into it till it's 3/4 full..Close the lid and freeze it overnight or atleast for 6 hrs untill it sets completely...
  4. Now what....?  do i have to say ....enjoy ur kulfi..... cheers !!! 

Note:-
  • To Unmold the kufi just show the mold in the running water for few seconds.
  • If u don't have a traditiional kulfi mold u can use popsicle mold .or can use small cups..

       Hi friends this is my 100th post....and i would like to thank all my fellow blogger and friends for encouraging and motivating me...today I'm going to share a very special sweet..."Mysore pak"...I'm not a sweet tooth person but i like it if it's homemade...my son loved it...came out very delicious......

Homemade Doughnuts

Ingrediants:-

For Doughnut:-

  • All Purpose Flour - 4 cups
  • Whole Milk -1 and 1/8 cup
  • Sugar -1.4 cup
  • Yeast - 1 pkt (2 and 1/4 tsp )
  • Salt - 1/4 cup
  • Butter - 1 and 1/4 stick
  • Eggs -2
For the Glaze:-
  • Powdered Sugar -3 cups
  • Salt - a pinch
  • Vanilla Esscence - 1/2 tsp
  • Milk / Cool Water -1/2 cup
Method:-
  1. Boil Milk and sugar untill sugar dissolves...let it cool..
  2. When the milk is slightly warm add it to the yeast and mix lightly and keep it undisturbed for 10 to 15 mins..
  3. After 10 mins this yeast mixture will be frothy.

  1. Melt butter and let it cool, once cooled add the eggs and mix well...
  2. Add the yeast mixture to this egg and butter mixture.
  3. And beat till well incorporated.
  4. Mix all purpose flour and salt .Add this mixture to the egg mixture little by little and form a dough.This dough will be little sticky..
    
    5. Grease a bowl with butter or oil ..
    6. Transfer the dough to this bowl and cover it with an air tight lid
    7. Refrigarate it overnight.
    The next day...

    8. Slightly Flour the work surface.
    9. Roll the dough to one inch thickness
    10. Take a round cookie cutter and make circles.
   11. Take another small cookie cutter or in my case i used the lid of a plastic juice bottle..to make a circle
          inside the big circle           

    13. Transfer these circles to a plate cover with aluminium foil  and cover it with a damp cloth and Keep it aside for an hour .
    14. After an hour the dough would have risen very well...look at the pics to see the difference..

     In a pan heat oil for deep frying and fry each doughnut to golden brown color and let it cool..

    17.Make the Glaze by mixing water/milk with vanilla essence and powdered sugar...i used only water in   
         this glaze...so it was not white in color...but if we use milk instead we'll get nice white glaze.
    18. Dip each doughnut in the glaze ..don't dip in fully just 1/2 or 3/4 th of the doughnut must be dipped..
    19. Place these doughnuts in a wire rack  and let it dry... 
    20. This is most important step in the whole process...... dig in...


This doughnut was very light ,airy inside and crispy outside...do i have to say more? it was absolutely divine...so friends when u crave for a doughnut try to make it at home next time...u'll surely love it..this recipe yielded about 35 doughnuts...

Red Currant Muffin





Ingrediants:-
  • Butter -1/2 cup (@ room temperature)
  • Sugar -1/2 cup
  • Eggs -2
  • Lemon zest -1 tsp
  • All purpose flour / Maida - 1 cup
  • Baking Powder -2 tsp
  • Salt - 1/4 tsp
  • Red Currants - 1/2 cup


Method:-
  1. In a bowl mix all purpose flour/ maida ,baking powder ,salt ,lemon zest .and keep it aside..
  2. In another bowl mix softened butter ,sugar beat untill it becomes creamy.
  3. Now add Eggs and beat again..
  4. Now add APF mix to this  litttle by little and beat well..
  5. To this batter add the red currants and fold in gently.. 
  6. Now pour this batter in the muffin cups and bake @ 375 deg for 20 to 25 mins...or untill tooth pick inserted in the center of the muffins comes clean.

Enjoy with some nice coffee...kids will love it too...

Rice Kheer

    This is a very easy and foolproof  desert which requires very minmal ingrediants all of them are available in our homes at all times ,the best part is it still taste divinely delicious....
