Pomfret Masala Fry



Ingredients:-

  • Pomfret Fish - 4
  • Oil
To Grind for the Masala:-
  • Pearl onions -2
  • Ginger - 1 inch Piece
  • Garlic - 2 or 3 big pods
  • Dry Red Chillies -15 ( adjust according to spice level)
  • Cumin - 1 tsp
  • Coriander seeds - 2 tsp
  • Peppercorns -1/2 tsp
  • Turmeric Powder -1/2 tsp
  • Salt
Method:-
  1. Clean the Fish ,make slits on either side of the fish and Pat it dry with paper towel /clean kitchen towel.
  2. Now Grind all the Masalas Given for Grinding into a semi coarse paste.
  3. Now apply this paste in between the slits and all over the fish..and let it marinate for atleast 30 mins in the fridge.
  4. Now heat a wide bottom pan and add little oil ,once the oil is hot shallow fry the fish...
  5. Fry for approx 5 to 8 mins on each side on a medium flame or until the fish is completely cooked and browned on both sides...
  6. Spicy and Flavorful Fish fry is ready to enjoy :)

This is a best side dish for a  Rice and Fish Curry..

Shrimp / Prawn Thokku

   
      Before going to today's recipe, I would like to dedicate this post to my hubby, M. who is so supportive and encouraging and he gives me so many wonderfull ideas regarding this new found passion of mine. He is a kind of man who can never say no to anything / anyone and he is a great cook ,who occasionally enters the kitchen. He just throws in a bit of this and a bit of that and miraculously whatever he cooks turns out delicious....today he made this totally delicious prawn thokku  for us and we had a very delicious meal of this Prawn thokku, Sambar,Rasam,Rice and pickle ...Thanks to Hubby dear :) Now lets go to the recipe...


Ingredients:-
  • Shrimp /Prawns - 1 lb ( cleaned ,deshelled and de veined)
  • Onion - 1 medium size
  • Tomato -1 small
  • Green Chillies -2
  • Cumin seeds - 1 tsp
  • Curry leaves - a stem
  • Ginger Garlic Paste - 1 tsp
  • Chilli powder - 1 to 1.5tsp
  • Coriander powder -1.5 tsp
  • Turmeric powder -1/4 tsp
  • Cumin powder -1.2 tsp
  • Coriander Leaves / Cilantro- few tbsp(chopped )
  • Salt
  • Oil
Method:-

In a kadai heat oil and seasaon with Cumin seeds, curry leaves 

Now Add in Sliced onion and green chillies saute till transparent.

Add the ginger garlic paste and saute till raw smell goes.


Add in the chopped tomato and saute few secs..

Add the Turmeric powder

 Now Add the Chilli Powder

 Coriander Powder

 Cumin Powder and salt

Saute till Tomato turns mushy and oil ouches out on top

Now add the Cleaned Prawns 


And mix well with the masala..and add the chopped coriander leaves / Cilantro


Cook Covered In low to medium flame for 8 to 10 mins or untill the shirmp is cooked...don't have to add water 

Once the shrimp is cooked..

Cook uncovered till all the excess water evapotares 

 and the oil ouches out of the gravy..

Yummy Mouthwateringly delicious Shirmp Thokku is ready :) 
Best served with rice ,idli ,dosa ,chappathi...

Spicy Fish Curry With Kudampuli



Ingrediants:-
  • Fish - 1/2 kg ( King fish, Pomfert ,Pompano )
  • Shallots - 1 cup chopped
  • Kudampuli -4
  • Garlic -4  big pods
  • Ginger - 1 inch piece
  • G.chillies-2
  • Fenugreek powderr -1/4 tsp
  • Chilli powder - 2 tbsp
  • Coriander Powder - 1 tbsp
  • Turmeric Powder - 1/2 tsp
  • Mustard seeds -1/4 tsp
  • Curry leaves - 2 stems
  • Salt
  • Oil
Method:-

  1. In a pan heat oil and season with musard seeds and curry leaves.
  2. Add chopped shallots and saute till transparent..
  3. Add in garlic ,Ginger, G.chilliessaute for few mins.
  4. Now simmer the flame and add chilli powder,coriander powder,turmeric powder,fenugreek powder..and saute till raw smell goes..
  5. Add Kudampuli 
  6. Add  little salt ,water according to the consistency of the gravy and let it come to a boil...
  7. Once the gravy stars boiling add the fish pieces and cook covered for 10 mins in medium flame..
  8. Cook uncovered for 5 mins....and the gravy is ready to be served...

Enjoy this with some white rice and with some fish fry...

Masala Fish Fry



Ingrediants:-

  • Dry Red Chillies -15sp
  • Coriander seeds - 2 tsp
  • Cumin seeds - 1 tsp
  • Peppercorns -1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Salt
  • Oil for deep frying..
Method:-

  1. Make a coarse paste with all the above given ingrediants in the pic..
  2. Marinate this to the fish for atleast 1 hr...if marinating for more time ..refrigarate it..
  3. In a pan add enough oil to deep fry the fish .. and once the oil is hot simmer the flame to medium and fry the fish 5 mins on each side or till u get nice brown color on the sides...

Enjoy this spicy fish fry with some kappa , fish curry and some hot rice...lovely combo...

Tuna Roast



Ingrediants:-

  • Canned Tuna - 300 gms
  • Onion - 1 medium
  • Ginger garlic paste - 1tsp
  • G reen chillies - 1
  • Mustard Seeds -1/2 tsp
  • Fennel Seeds -1/2 tsp
  • Curry Leaves - a spring
  • Chilli Powder - 1  to 2 tsp
  • Coriander Powder - 1.5 tsp
  • Turmeric Powder -1/4 tsp
  • Garam masala Powder -1/4 tsp
  • Cumin Powder -1/2 tsp
  • Salt
Method:-


  1. In a pan heat oil and season with musard seed ,fennel seeds and curry leaves
  2. Add onion and g.chillies and saute till  onion becomes transparent.
  3. Add Ginger garlic paste and saute till raw smell goes
  4. Add all the spices chilli powder,coriander powder,cumin powder,turmeric powder, garam masala powder,salt and fry well for few more mins.
  5. Now add the tuna and saute again for few mins..
  6. Now sprinkle little water and cook covered till all water evaporates or till tuna is cooked .
  7. Now cook uncovered spreading tuna with the spoon on the pan so that it will brown evenly..cook for 3 mins..
  8. Now do the same till all the tuna is slighty browned...

  Serve as a side dish  for rice ...

Spicy fish curry with a twist(maruinthu curry)




Ingrediants( to be roasted):-
Coconut - 1/2 grated coconut
Red chillies -10
Shallots -2
dry ginger -1 inch piece or dry ginger powder-2tsp
mustard seed -1 tsp
ajwain (omam) -1tsp
Cumin Seeds - 1tsp
Coriander Seeds - 3 tsp
Turmeric powder- 1/4tsp
peppercorns -5 Curry leaves
Ingrediants(for the curry):-
Shallots -1 cup
Green Chillies -1
tamarind -lemon size
Curry leaves
Oil
Method
Add the above ingrediants mentioned to be roasted except coriander seeds in a pan add a little oil to it and fry them all till the coconut is fried well or till the coconut turns dark brown.You will get a nice aroma at this stage.once this is done add the coriander seeds and fry them for fews sec and switch off and allow the mixture to cool and grind it to a smooth paste. In a pan add oil fry the shallots,curryleaves,u can add drumstick and mangoes also.fry well.add some water and cook covered for few mins till shallots becomes tender.add the coconut paste and let it boil well .add the fish pieces and cook covered till the fish is cooked well and becomes soft.the curry is ready to serve.. Enjoy ur spicy fish curry with rice,will go well with idlis and dosa also..
this preparation is the same as the other spicy fish recipe i've posted but this recipe has few more ingrediants to be added for roasting . this curry is given daily for mom who is breast feeding....it is good to take it atleast once a month for others...

Spicy Fish curry (Varutharacha meen Kulambhu)




Ingrediants( to be roasted):-
Coconut - 1/2 grated coconut

Method

Smelt and Raw Mango Stir Fry (Nethily Manga Avial)




Ingrediants:-
Nethily Fish / Smelt -1/4 kg
Raw Mango -1/2(cut in juliens)
Coconut -1/2 cup
turmeric pwdr -1/4 tsp
Red chillies -2 nos
Shallots - 2 nos
Garlic - 1 pod
cumin seeds-1 tsp
onion - 1 (small)
coconut oil
Preparation:-
Grind the coconut,r.chillies,garlic,shallots,cumin seeds to a coarse paste.
In a pan fry onion,mango in coconut oil add little water cook covered till mango is cooked and add nethily and saute for few secs.but be careful not to break the fish as it is very delicate.Add little water and cover cook in sim for few mins or till the fish is cooked .add the ground coconut paste and saute till the raw smell goes add little oil if it sticks to the bottom,add salt to taste.
For Tempering add Mustard seed and curry leaves.add the tempering to the avial and serve asa side dish for rice will go well with fish curry
